Try out this pancake variation with bananas, cottage cheese and pecan nuts

Makes 12 slices
Preparation time: 10 min
Standing time: 1 hour
Cooking time: 30 min

PANCAKES

2 ripe bananas
80 ml (⅓ c) butter, melted
750 ml (3 c) milk
375 ml (1½ c) flour
5 eggs
30 ml (2 T) brown sugar
2 ml (½ t) vanilla essence
pinch of salt
2 ml (½ t) ground cinnamon
2 ml (½ t) ground allspice

FILLING

460 ml (2 tubs) smooth cottage cheese, softened
375 ml (1 ½ c) plain yoghurt
80 ml (⅓ c) caster sugar
2 ml (½ t) vanilla essence

TOPPING

60 ml (¼ c) dark brown sugar
15 ml (1 T) butter
125 ml (½ c) pecan nuts, toasted
125 ml (½ c) cream

1 Pancakes: In a food processor, blitz the bananas, butter and milk together. Add the remaining ingredients and blitz until well combined. Transfer to a bowl and allow to rest in the fridge for 1 hour.

2 Heat a nonstick pan over medium heat then grease. Pour a ladleful of the batter into the pan, cook undisturbed for 3 minutes or until browned and flip over to cook the other side.

3 Set aside on a plate and repeat with the rest of the batter, making sure the pancakes don’t stick together when stacked.

4 Filling: Whip the cheese until softened. Add the yoghurt, sugar and vanilla essence while beating.

5 Put one pancake on a plate, use a spatula to spread cheese mixture over and top with another pancake. Repeat with the rest of the pancakes and filling.

6 Topping: Put the sugar in a pan over medium heat until it begins to heat, add the butter, nuts and cream and whisk until well mixed and thick.

7 Spoon the nut mixture over the pancake stack and level. Serve at room temperature.

Generations actress Winnie Modise sets the record straight about separating from her husband Thabo and moving out of their home

Theirs has often been considered one of Mzansi’s more stable marriages and they always seemed very much in love – even after 11 years together. But sadly it seems soapie queen Winnie Modise and husband Thabo just weren’t meant to be.

They really did look like the perfect couple. Thabo was the doting cameraman husband who only had eyes for his gorgeous, talented, actress wife but just like Winnie herself says, “Nobody knows the heat in my kitchen but me.”

Winnie (37) isn’t her normal bubbly self – she’s subdued and there’s no mistaking the pain in her eyes. We’re sitting in the cosy Generations offices, surrounded by glamorous magazine covers and pictures of happy, smiling stars, something Winnie clearly doesn’t feel.

And judging by her hesitant start as she tries to find an answer to a question as simple as “How are you doing?”, she’s clearly in a lot of pain. She takes a deep, calming breath before plunging in.

Toya Delazy is on top of the world after two years of musical success.

She won Best Newcomer and her debut CD took home Best Pop Album and Best Production at the recent SA Music Awards (SAMAs), but it feels like Toya Delazy has been around for a while.
Maybe that’s because the young, vibey musician has been featured in just about every magazine and on various radio and TV shows since she first hit the public eye two years ago. Or it could be because she comes from a long line of exceptional musicians – one of them a former SAMA-winner.
“I’ve been really blessed and I’m very grateful that my career is going well,” Toya says when we meet at our Sandton studios to chat about her success.

Thabiso Siswana is a corporate administrator at a top bank, but on weekends she works as a tradional healer.

While growing up she was a happy little girl who played with dolls and had a lot of friends, but when she went to sleep the nightmares began.

They were so vivid and terrifying that she woke up screaming, her body convulsing in uncontrollable spasms.

Thabiso Siswana, who’s now 24 years old, realises those horrific nightmares were all part of her calling to become a sangoma.

“I used to dream about being flung from a car or talking snakes slithering up the garden path to the front door of our home,” she says.

“As it turns out, these dreams were a sign that I should become a sangoma. For example, being flung from a car meant my ancestors were pushing me away because they were upset with me for not heeding the calling.”

Then, in her late teens, she was beset with financial problems and she had three car accidents in a short space of time.

“But the last straw was when I had another horrifying dream about my ancestors abandoning me,” she says.

“That’s when my mother took me to see a traditional healer who confirmed what I already knew – my ancestors were about to abandon me. And that’s when I decided to answer the calling to be a traditional healer.”
